Easy ANZAC biscuit recipe

ANZAC biscuits are all fairly similar, but there are some notable differences. Some are soft and fluffy, with a more cake-like texture, others are chewy and yet still others are crunchy and crispy. This super easy recipe for ANZAC biscuits errs somewhere in the middle with a nice chewy softness but a crispy exterior. Best eaten fresh out of the oven while they’re still warm – they truly feel like a warm, golden hug to your tastebuds.

Easy ANZAC biscuits
PREP: 10 mins | COOK: 10-12 mins

Ingredients:
1 cup whole oats
1 cup dessicated coconut
1 cup plain flour
1 cup brown sugar
Pinch of salt
150g butter
2 tbsp golden syrup
1/2 tsp baking soda
Method:
In a large mixing bowl combine oats, coconut, flour, sugar and salt.
Melt butter and golden syrup in a saucepan over medium heat, then add baking soda, remove from heat and stir together. Pour into the dry ingredients and mix.
Roll large tablespoons tightly, compacting the mix with your hands. Place 3-4 cm apart, and flatten slightly on a lined tray. Bake at 160ºC fan-forced for 10-12 minutes, until golden brown.
Note: Cook for around 10 minutes for softer cookies, and 12-15 minutes for crispy and crunchy.
